Par to the Snips, and other Sunday Thoughts

Even though I don’t make resolutions at New Year’s, I do see the value and impact that the connotation of the date can have on our lifestyles. Β And if you know me even a little bit, you know I’m all about cheating when it comes to getting healthier and improving habits (with minimal effort and maximal positivity!).

As a result of it being New Year’s, it was easier for me to turn down Matthew’s cheese balls (Snikiddy, but still cheese balls) yesterday and a no-brainer to say no to coffee this morning. I hope that with this running start (thanks to the date and to knowing that lots of other people are trying right now too) I can keep it up and maintain balance too.

Kimberly Snyder says, "Parsnips contain a bevy of important nutrients, including vitamin C, vitamin E, fiber, pantothenic acid, copper, manganese, and are a great source of niacin, riboflavin, B6, thiamine, magnesium, and potassium. And let’s not forget folic acid!" (This one is already peeled)
Matchsticks? Yes, out of parsnips. The effort to chop was annoying, I'd look for a shortcut! But I wanted them thin so they'd get crispy...
...And they did! Crispy fries with a twist and a bunch of nutrients (plus organic ketchup). I baked them on a cookie sheet until they looked like this---I didn't keep track of time, but you could just keep an eye on them πŸ™‚
This was my lunch. I had planned to make guac, but I was hungry so I just ate it with a spoon.
Random Fact: My socks rarely match unless I'm going somewhere that will involve taking my shoes off. I often forget that this is not normal, but I just can't manage to keep track of matches (and can't be bothered to search).

I’ve been planning on giving the blog a facelift for a month (since I decided not to quit blogging), and I think I’ll have time this week to work on it. So I hope you’ll let me know what you think!

  1. I think it's a shame that I already went to Wegman's this morning. I deffinately want to give those parsnip “fries” a try! πŸ™‚

  2. I think you'll like them! My recommendation is to be sure to be patient

    enough for them to get crispy in the oven. Hopefully all the nutritional

    benefits are not sapped out by overcooking πŸ™‚

    Parsnips are so tasty! I love them as fries or in soups. Yum Yum. Random fact about me: I eat at least two apples pretty much every day. I love them and can't get enough!

  5. I never think to buy parsnips. I think I've only had them once. And you say your socks rarely match – mine must be on just right. Cannot be inside out, the line has to be perfect across my toes, that sort of crazy thing πŸ˜‰

    wouldn't have thought to add parsnips to soup, but that sounds like a great

    idea…almost potato-y, but maybe not so mushy!

  9. Parsnip fries?! They look delicious! I'll have to give it a shot sometime soon. And my random fact (that you probably already know…) I'd be happy to stand in the kitchen for hours cutting and chopping and dicing, so the matchsticks would be no problem!

    Random fact? I do not eat my fruits and veggies! I know I need to, and I totally plan on making my future kids eat them. I have GOT to improve that in 2011!!

  17. Lisa ! Yes Wegmans is awesome! I have been there once, my fiances mom lives in Wisconsin and there is one near here, so when I was visitng she took me there because she knew they had a helathy food section, I loved it!

    SO sad we both dont have whole foods or trader joes near us : p

    and cheat whenever possible (get them in ways that doesn't feel like I am!).

  19. I made the parsnip fries in combination with sweet tater fries Tuesday Night for dinner with the kids along with turkey burgers and veggie burgers. Everyone loved them. I had a couple of parsnips leftover so I added them to Fitnessista's sweet potato black bean chili recipe last night. Was great!
