My friend Ali introduced me to Cream of Buckwheat…I know, it doesn’t sound so awesome. But it is!
Buckwheat is gluten-free, and is actually a grain-like seed (not an actual grain). I like to make the cream of buckwheat just like oatmeal (on the stove), add a handful (or two) of soaked/dehydrated buckwheat and a scoop of nut butter. It’s a great texture (way better than oatmeal!).
I intend to raw-ify it soon and try it with my new Justin’s nut butters that I bought at Whole Foods.
