SunButter Cups… Perfect with Coffee. Or Anytime, Really.

My Mom hasn’t had my pb cups before (how did that happen?), and so when I unexpectedly ended up staying in NY for 4 extra days, I made some for her.

SunButter Cups

4 Tbsp coconut oil
8 Tbsp SunButter (I used crunchy)
1 Tbsp Cocoa Powder (I used Navitas Cacao, but if you’re new to this I recommend Hershey’s Special Dark)
Vanilla Stevia (I always use NuNaturals liquid)
Sea salt
Maple syrup

Directions:

Melt the coconut oil. In a bowl, mix 2 Tbsp of the coconut oil with 4 Tbsp SunButter, a pinch of salt, and 1/8 to 1/4 tsp stevia (taste it as you go—I used 1/8 tsp). Put 1 Tbsp of this mixture in each mini muffin wrapper that you’ve set out on a plate. You’ll fill 9 or 10. Put the plate in the freezer or fridge (it doesn’t matter which, it just takes longer to harden in the fridge). While you’re waiting, take the remainder of the coconut oil and add 4 Tbsp SunButter, 1 Tbsp cocoa powder (unsweetened), 1/8 to 1/4 tsp stevia, a pinch of salt, and 2 to 3 tsp maple syrup (to taste). Mix this until smooth.

When the SunButter mixture in the muffin wrappers have hardened, remove from the fridge/freezer and add a Tbsp of the chocolate mixture to each one. Add crunchy stuff to the middle and/or top if you want to!

Return the plate to the fridge/freezer and wait till they harden. You’ll store these in the fridge.

Note: Make sure you taste this as you go along because your brands of the ingredients will determine how much sweetener you need, etc. Plus, I tend to like things not very sweet—so adjust to what you like!

My fave is plain, but I do like the crunchy ones too. I have another recipe to share soon too… my Mom loved the SunButter cups, but she really loved these…

News/Notes: I was supposed to fly back to California on Saturday morning, but I got all the way to the airport at 5am and realized I didn’t have my wallet. It was funny. But not. The best part is that when I realized it (after digging through my stuff at the drop-off location), Mom and I just looked at each other and laughed… I sent her to the cell phone lot for a minute while I went inside to un-check-in and cancel my flight (no fees since it was a reward points flight). Since my Mom is flying to Florida on Tuesday morning, we just took it as a sign that I should stay till then and went home to drink coffee and plan our weekend.

I’ve had a great time here (especially because the weather has been very mild, making it easy for me to traipse all over). And this weekend, I got extra time to make stuff in the kitchen, to spend more time with Mom, Matthew, and Dad… and I even got a chance to do yoga with a friend.

Everyone around here seems to be sick—and twice I thought I was in for the flu, but I overloaded myself with micronutrients and my arsenal of immune boosting stuff and it never turned into anything. I had to cancel a couple of friend get-togethers in good conscience though, when I had a headache and/or wasn’t sure if I was spreading germs. In spite of that, I’ve gotten a lot done here!

 

Now, I’m off for a coffee/yoga date, and I’m going to see Matthew and my Dad one last time after school!

    I love making sunbutter cups! I actually am all out and need to restock so I can get my coconut oil in my diet. I am so interested to see what the other recipe is!!

    A lot of people around me have the flu too and I’m hoping that taking lots of probiotics, eating healthy and staying active will keep me in the clear. Fingers crossed!

  3. I think i must be the last dinosaur around here to not have had the flu- I’ve been in contact with some who have (including my boyfriend who lives with me, but he didn’t have it that bad) and I still haven’t… I’m afraid its still to come.
    Also, I love sunbutter and those are so pretty!

    Yes! I make these for Ella about exact except I use carob to nix the caffeine. Inspired by your PB cups 😉
