First Thing:
If you’re here for the tuna recipe, which by the way, is not an endangered species, go get it here. Although a very specific (tipsy) public figure decided to trash me on twitter for posting a tuna recipe (apparently, promoting more veggies and less tuna is not sufficient in saving the waning tuna-to-be-canned population …that isn’t really waning), I still stand by my research supported viewpoint on the benefits of eating high quality tuna outweighing the costs for people, when they choose to eat it. My thought is that I love for people to make informed choices, and whether your choice is pro- or con- tuna or other animal products, it’s the right choice if you’re informed in making the decision! No judgment here, friends.
Now on to the meat of the post 🙂
A few nights ago, Katelyn came over and we made dinner—I’m pretty sure she is my food twin. We spend more money at the grocery store for one meal than I often spend in four days on my own. This, my friends, is not a bad thing. It’s the opposite! Consider this: My friend Ali and I went to dinner on Saturday night to celebrate her birthday—at a lakeside restaurant on Keuka Lake. The ambiance was nice, the company was great…and the food was partly awesome and partly just taking up space on the plate. We concluded that (1) we wouldn’t tell anyone how much money we spent on that dinner, and (2) next time we’d just go to the store and make what we wanted at her house.
So when Katelyn and I got together, we were actually together long enough to have two meals, and it went something like this:

P.S. I love the idea of kids eating this, but I don’t know any kid in my life who would!
This is a very easy recipe.
2 avocados, diced (not mashed)
10 seeded grape tomatoes, diced
2 cups baby spinach, chopped into tiny pieces
1/4 cup diced onion
2 cloves garlic (minced)
juice of one lemon (or a little less)
1/2 tsp cumin
dash chipotle powder, or chop finely one jalapeno pepper
5 Dried figs (3 fresh figs may be better, but I didn’t have any), diced
Himalayan crystal salt (or sea salt) to taste
Combine all ingredients. Serve with crackers or whatever you like.
We made sprouted mung bean soccas.
This was amazing! If you like avocados and guacamole, I think you’ll like this–the savory/sweet combo is pretty subtle, and it really worked here.
Later, when we were ready to eat again, Katelyn and I made crab cakes and salad.

In addition to our main courses, Katelyn also made cookies that turned out awesome (and used the NuNaturals Stevia baking blend for the sugar). I’m sure she’ll post the recipe soon? We also did resist splurging on Zevia by making our own version.
Sparking water (seltzer—which is really darn cheap for 2 liters…and we may or may not have gone through the entire thing!) plus flavor (cherry extract was best, but lemon juice, pomegranate powder, Navitas Naturals Acai powder, or whatever you like), and liquid stevia. Voila—instant soft drink! Frankly, the pictures did not look pretty, but you can imagine what it looks like. You could add herbs and fruit of your choice to spice it up a bit too!
Would you rather eat out for the ambiance or eat in so you can make exactly what you want?
What do you think about people pushing their ideas about food choices on others? It just seems like there is a fine line between promoting ethics in food choices and attacking people for what they choose. I, personally, respect any person’s choice, especially if the decision is informed and made consciously and not just as a result of “going with the flow.”
I have no doubt that those crab cakes are awesome! It’s always fun to get together with friends and share things we love… in your case – this awesome food!

As a vegetarian in a state of meat and potatoes, I’d honestly prefer to eat in. However, it is nice to go out once in a while for the ambiance, to dress up and let someone else clean up 😉

Right now I’d say I only eat out 4 or 5 times a year, so I’d like to do that a little more this summer now that it’s PATIO time!!
As for your twitter attack… I find it offensive when people are pushy or expect you to take their words as rules, rather than opinions. But, like you, I’m all for sharing respectfully!
I’m sorry you had to deal with that Lisa! I can’t stand it when people try to push their food choices on others. We are all entitled to eat in a way we feel is best for our bodies and our beliefs. It is no one’s business but your own!

I like eating out for a change, but more often than not I prefer to eat at home and get creative withi t!
Drinks definitely do taste better out of jars! I’m not sure why – but I love garage saling so I can pick up more jars/drinking mugs for 25 cents!
Also, that avocado salad looks amazing! I rarely use lettuce as my main salad ingredient and next up I’ll be trying avocado! 🙂

Bahhh to hell with whomever bashed you! I think you speaking your opinion and educating people is great. This avocado salad..looks..amazing. Fun easy way to get in some fats! I loveee eating out only for the ambiance..sure they food is good a lot of time times, but I always choose a place I know will be crazy busy. The people around me make it fun. On the contrary, I love even more cooking and eating my own food so I know EXACTLY what I am eating. I never push my food ideas onto anyone, only casually share where I am coming from. People either take it or leave it.

Honestly she is the one who looks dumb and im sure you probably got a few extra readers because of it so it all worked out… Food is a personal thing and everyone has their own opinions & choices, it is ok to share your feelings with others but there is a fine line between sharing and pushing. food looks great ill have to try the drink recipe 🙂

I LOVE Avocado but I’ve never tried figs! I need to find some so I can make this salad! IT sounds perfect!
I like going out for the social aspect but I like cooking for myself to keep it healthy. The problem is, most of my friends don’t like my “weird” healthy food, so cooking for them isn’t usually an option! I guess it’s all about balance 🙂
This looks like a really delicious salad and the figs were a brilliant addition! I generally eat in so I can control what I’m eating, but sometimes for a special treat (and no clean up!), it’s nice to eat out.
For financial reasons, I most often eat in and make (usually) what I want. (I can’t always afford the fish or shellfish that’s $15 a pound and up.) So I DO enjoy eating out when the ambiance AND food are enjoyable–and when I don’t feel that I’ve spent large bucks on so-so food.
As for pushing food choices on others, I have had to tell friends and co-workers that I am NOT the food cop. I don’t remark on their food choices. If I am asked, I make recommendations that I consider to be somewhat gentle and common-sense.
Frankly, I don’t know why people want to be ignorant about what they put into their bodies when it can result in life-endangering disease. Sometimes it’s just a matter of years of “bad habits” and sometimes it is willful ignorance, of which I am guilty, too! (For years, I ate no dairy and my calcium supplementation was spotty. I now have osteoporosis. How much that had to do with it, I don’t know. My Vitamin D levels were in the basement and I only got them up to acceptable levels over the past year. This no doubt played a part. As did years of overexercise and consuming very little fat.)
Every year, we all learn new things about nutrition. And our understanding of nutrition continues to grow as we have new studies to consider and new viewpoints are made public. Some people are simply strident and argumentative. They will always be around to pick at you and find fault. I missed the Twitter debate, but carry on, Lisa!
