Chocolate Avocado Pudding (with a bonus superfood ingredient!)

I made chocolate avocado pudding this weekend (again). I’ve always loved this stuff, and it’s quite a fun game to spring it on people who (a) don’t like avocados or (b) don’t know what the ingredients are. I’ve never had anyone guess that the main ingredient is avocado, and the only people who don’t like it are die hard super sweet milk chocolate fans… But I suppose you could make it more sweet and more milky if you like!

I’m extra in love with this stuff since I followed Laury’s lead and started adding melted coconut oil!

Dark Chocolate Avocado Pudding

3 avocados
1/4 cup cocoa powder (I used Navitas Naturals, but for non-cacao loving people I generally use Hershey’s Special Dark)
1/4 cup any kind of milk
1/4 cup maple syrup or other sweetener (I used maple syrup but when it’s just for me I use stevia only–1 tsp or less, to taste)
1/4 cup melted unrefined coconut oil

Blend or process until smooth! I’d probably use a food processor unless you have a high-speed blender (like a vita-mix or blendtec). Remember—taste as you go and adjust the amounts accordingly!

    That’s a great question! I have been known to eat all of it myself in a day… but that’s kind of a lot. Last night, two people ate about half of it for dessert so I would say it makes 4-5 servings. Also, since it’s super high in fat and fiber it is really filling…

    A snow globe?! That’s such a thoughtful gift!! Left me tell you, I’ve been so sad that it’s the holidays and 50 degrees outside here in Ohio. I want snow too :( Maybe I need a snow globe (I did get out my snowflake earrings the other day, I tried!).

    I’m making this pudding at work one day, and I can’t wait. It just looks awesome. I’ve seen it on your blog before, but this version looks so rich and creamy!

    Don’t you love it when guests can’t guess the what your desserts are made of? Maria made some brownies for our family last night that were made with almond butter, zucchini and maple syrup and they loved them!

    that is my kind of snow too! dads are the best! that promenade photo is gorgeous. oh goodness i want to go to cali! love drinking the kombucha out of the wine glass haha. classy! i really need to try these choc avocado recipes i see around. it’s not that i’m afraid to i just need to make the time to make them!

    Your pudding is so much prettier than mine! Mine is always kind of…lumpy. With green bits. But it tastes great! Your dad’s gift is very sweet…put a smile on my face.
