Vanilla Coconut Ice Cream

I’ll keep this post short and simple and sweet—just like the recipe!

Vanilla Coconut Ice Cream (coconut milk + vanilla + a dash of guar gum + a dash of xanthan gum + sweetener) blended in the blender and then put in an ice cream maker or frozen in the freezer. You can leave out the guar gum and xanthan gum if you don’t have them–they are both fibers that thicken and smooth out the ice cream.  Not essential, just an added bonus!

Sprinkle Chocolate Covered Cacao Nibs, and top with strawberries or whatever else you’d like!

    It was So Delicious coconut milk. I tend to avoid the canned as it has more “stuff” added to it. I'm sure the canned would work too though. Actually, the So Delicious Coconut Kefir would work too!
