Coconut Flour Flatbread Sandwich (with herbs!)

Historically, I have mostly made my coconut flour flatbread into grilled cheese sandwiches, but last week when I was at my Mom’s house, we decided to use our leftover roasted chicken for sandwiches…

 

I added a lot of dried herbs from my Mom’s garden to this bread batter—and I didn’t measure how much I put in, but it worked great. I actually think this was the best bread yet!

Coconut Flour Flatbread with Herbs

1 egg
1 Tbsp coconut flour
2 Tbsp liquid (I used half and half—this makes it super fluffy!)
a few crumbled leaves of each: basil, oregano, rosemary, thyme, and …. a couple others

In a skillet on medium low heat, I added the batter and let it brown pretty slowly (because I was prepping the other sandwich ingredients). After I flipped the bread, I added cheese to one side so it would melt. When the second side was done, I removed the bread from the heat and added the other sandwich contents. This makes two pieces of bread (one sandwich).

This sandwich had roasted chicken, spinach, tomato, and honey mustard (ok, and a little mayo!).

Mom and I both decided it was better than any sandwich we’d get in a restaurant. This bread is so good!

I’ll share the roasted chicken recipe soon too–it’s amazing, and I think I’m going to make it tonight.

News/Notes: The weather in Santa Monica is amazing right now—mid-70’s and sun. I think I appreciate it a little extra based on having been in NY for a week. I don’t have any major fun things going on right now, but I do have a lot of work projects to focus on. I am taking today off from yoga because I’m sore and need to recover. I’m looking forward to a week or so from now when I’m back in the groove of being consistent with it (it was pretty inconsistent in NY…although I did go to class twice).

Any fun things planned for your weekend? I’m going to be outside as much as possible!

Have you made the coconut flour flatbread yet? I used the bread ingredient ratios this morning for waffles…and that worked great too! I’d like them to be slightly more crispy on the outside though, so I’ll keep working on it and share later. Michelle and Lori recently made coconut flour waffles, so I had to try it too!

    Everything looks amazing about that sandwich, not only the breed but those fresh red tomatoes and fresh basil! I love roasting chicken so ill have to remember to make this with leftovers.

    Nope, no fun plans for the weekend….bummer. It’s cold here in Columbus, but the sun is out so I need to get outside too!

    If I make a sandwich with this bread in the morning, will it still be good in the afternoon as a packed lunch?
