Caprese Bruschetta (again) and PB Cups (again)

I’m making dinner for K tonight…and she requested pizza bites (I told her about them when I made them up, but she has not yet experienced them for herself!).

The bacon cheeseburger version of “bites” that I instagrammed (yes that’s a verb now) turned out amazingly well too, but I want to make them one more time to verify the ingredient amounts. The extra “stuff” in them made them a little more difficult to hold together. So I’ll experiment and share later!

I have a huge list of new things to make… but I keep going back to these old faithful recipes too. Especially the pb cups. And everything I can possibly make with coconut flour 🙂

News/Notes: This week went super fast since I traveled on Monday… It’s been a bit of a whirlwind, but I got right back into my yoga groove. It feels good (and slightly sore). I have a great product review coming up soon to share with you, it’s TheraFit shoes developed by Dr. Lisa Masterson from the show The Doctors. I’m extra excited because of the shoes’ endorsement by the National Posture Institute. Posture is one of my favorite topics, especially in corporate wellness coaching. Once I had finished my yoga teacher training certification, I set up posture assessments for people, and it’s amazing what a little adjustment in walking/alignment/shoes/desk can do for a person!

Any favorite recipes you keep going back to over and over again?

    Can you email me a PB cup please? My posture is a lot better than it used to be. I do credit a lot of that to years of ballet. I do have to really pay attention to how I sit at work though.
