I kept seeing tweets, instagrams, and fb posts about National Donut Day today, and it quickly solved my indecision about what to do in the kitchen (I was debating between coconut flour mini pizzas, cocoa cashew cookies, and macaroons…)
I made a very small batch because (1) I didn’t know how they’d turn out, and (2) I don’t have anyone to share them with at the moment.
Gingerbread Mini Donuts with Orange Cream Cheese Frosting
Mix:
1 Tbsp coconut flour
1 egg
1 Tbsp almond flour
1/4 cup half and half (or try another milk of your choice)
1 tsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg
1/2 tsp liquid vanilla stevia (I always use NuNaturals)
Grease a mini donut pan well (or these will stick). I used the Toasted Squash Seed oil….it added a great toasty flavor! Place in a 350 degree oven for about 7-8 minutes. This made exactly enough batter to fill the 12 mini donut pan (how the heck did I do that?). About 1 tsp goes in each space, so they will not be full, but they’ll rise as they bake.
Frosting:
melt 3oz cream cheese (I used a double boiler), and mix with a scant tsp of liquid orange stevia (don’t use too much or you’ll taste the stevia flavor!).
Mix. Bake. Melt. Frost. Done!
I really loved these—I’m a big fan of gingerbread. And cream cheese. It worked well together—and the texture of the donuts was awesome. Plus, they went great with coffee. Sometimes I think the trick for working with coconut flour is to make small batches of things (and obviously a lot of liquid!). This wouldn’t serve a family—the donuts are tiny (despite how it looks in the pic). I ate all of them throughout the morning, and I figured it was about the nutritional equivalent of eating a coconut flour grilled cheese sandwich. I’m ok with that.

I’m working on baby shower invitations this weekend (for my cousin’s shower), and I have a super fantastic awesome gift for her on its way from my friend Cathy in Canada. I am not a big fan of buying things from gift registries (although I do it often). I prefer to put my heart into a gift for someone I really care about—but since I have no crafty skills, I’m putting my heart into it via Cathy’s skills
Hopefully, the sentiment is the same!
Cold rain today. Annoying, but not surprising—I wanted to walk, but instead went in the sauna for an hour (not an even trade, but enjoyable and beneficial nonetheless).
I still have hope for later, if the rain clears. And if I’m feeling really ambitious, I’ll go to a yoga class (but I have one scheduled for tomorrow morning too–how many sun salutations and squat jumps can my thighs take in one week?). Next post will be a fitness post! (I think)
