Taco Grilled Cheese Sandwich

Monday was taco salad night over here. Since I don’t eat grains anymore, I skip the chips and just use crunchy lettuce. I know, to chip-eaters, that probably does not sound like a good trade, but I swear it works. I also sub in greek yogurt for sour cream, and I make my own taco seasoning to avoid preservatives and junky stuff like maltodextrin that seems to be even in the higher quality brands.

The problem with not cooking for a family of four or so, is that there’s no way my household will consume a whole pound of ground beef or a jar of salsa in a timely manner unless we try really hard. And I’ll be honest, we’re not great about leftovers around here. I made a point of re-purposing the taco leftovers though–I didn’t want to throw it out.

So I made a taco themed grilled cheese on coconut flour flatbread. It was great! It’s not really a recipe…but here’s what I did…

Taco Grilled Cheese Sandwich

I made Coconut flour flatbread (I didn’t add pizza seasoning, but I did add a tablespoon of nutritional yeast—parmesan cheese is better though).

I added:

Cheese

Leftover taco meat

Salsa

Avocado

Greek yogurt

There’s no great pic of this—it’s just not pretty!

 

So this one didn't actually have avocado or greek yogurt on it---I was out of those by the time I took a picture in good lighting...but you get the idea!

 

News/Notes: It’s just another manic workday around here! Thanks for the baby shower suggestions! I’m not much for those kinds of parties myself, but I really want to make it nice for Diane. I feel like it’s a way I can show her how happy we are for them to be starting their family.

Tonight was yoga and wine night—not really together, but I’m teaching yoga at a winery, so it’s symbolic of how great both of those things are, right?!

Random side note: if you asked me a question in the comments in the last few days, they all got answered today because I realized the email reply function was not working—so when I replied earlier to comments they were not posting or being sent via email. I’m not ignoring you, I promise!

Tomorrow I will see my trainer bright and early (6am), and I’ll work most of the day, do a webinar, and meet with a client.

Lisa, I finally got around to trying your coconut flour flatbread grilled cheese.  All I can say is, I’m mad at myself for not getting around to it sooner!  I’m doing a mini-cleanse with no refined flour and no sugar and the grilled cheese is what has kept me from going crazy the last few days.  🙂

    Thanks so much for all your creativity in the kitchen.  I know I benefit from it!

  3. good job on your recipe invention, lisa! i very rarely have leftovers because i don’t cook *traditional* dishes that make leftovers…but in general, i am not much of a fan!
    yoga + the winery setting – made me think of running races where they have wine or beer at the water stations…with yoga, it could be sip after every downward dog?! haha!

    I think I am the QUEEN of leftovers.  When people tell me they do not eat leftovers, I’m stunned, because I don’t know how to work with them (it makes it difficult to meal plan when you can’t incorporate leftovers!).  I love using greek yogurt as sour cream, AND while lettuce may not be quite as satisfying as chips, I’m down with the idea. Anything that is crunchy works for me!

    Rinaldo & I are pretty good with re purposing leftovers. I don’t mind eating the same thing 2 days in a row if I like it and it’s good!

    I  hope all is well with you and find more and more time to get some relaxing in! I don’t want my friend to be stressed out and not enjoying her days! 😉

  7. gosh i could never throw food away. I make new dished that includes my leftovers and finish everything the next day .. or the day after …  well actually i have had a quinoa salad with raw goats cheese for the past 3 days.. different peppers, tomatoes and pesto dressing every day though:)

  8. Well now you are making me feel bad! When we buy a lb of ground beef it is most definitely all gone that night! E is a big eater – I mean big – so we hardly have leftovers. This has actually been hard for me because I am used to when I was cooking for just myself. I always had leftovers!

    I am usually good with leftovers, but Mike won’t eat them…ever! He’s the weirdest with food!!!

  10. These look incredible!  It’s really hard to cook for two so Mike and I are always trying to find creative new ways to use up leftovers (he’s so much better than I am about just eating the exact same meal for 3 days in a row, lol).  🙂
