Toasty Coconut Flakes Cereal

I’ve been experimenting a lot with coconut over the last few years, and just as soon as I think I’ve covered all the options, I find another way to use it! This cereal recipe is definitely my favorite for cereal and it ranks very highly on my coconut list (along with coconut flour flat bread, coconut oil “frosting,” and double pb cups).

Toasty Coconut Flakes Cereal

2 cups large coconut flakes (I bought mine from here)
3 Tbsp water
1 Tbsp maple syrup (I used Grade B)

Directions: Pre-heat the oven to 400 degrees. In a large bowl, mix the water and maple syrup until completely blended. Dump in coconut flakes and stir until coated. Line a baking dish with parchment paper (I used 9×13, but most importantly it needs to have side on it — not a cookie sheet). Dump the coconut flakes into the baking dish and spread evenly. Put in the oven uncovered, stirring every few minutes until the flakes are toasty. Make sure you keep an eye on this or it will burn!

Remove from the oven, and let the flakes cool completely (they’ll get crispier as they cool). Eat like cereal! In my opinion, they are best with berries, but you could add anything you want!
