Chocolate Peanut Butter Pudding ….with a secret high protein ingredient!

Apparently, I’m still feeling the motivation from my training session yesterday—I ate extra well today, did two workouts, and went in the infrared sauna. I weighed-in too, and Joe was nice enough to take my “before” pics. He laughed at me for all of this, by the way, but he was supportive. I like how I’ve manufactured external motivation for all of this effort—it feels great to want to try hard for something, rather than just being ok with being “good enough.”

Maybe this weekend I’ll do a re-cap on the food/workouts if anyone seems interested in it!

I changed my eating schedule (which was really random before), so I felt kind of funny by late afternoon, and I made this great pudding (it did the trick, and I felt great afterward!).

High Protein Chocolate Pudding

In the Vita-mix:

1 large avocado
1/2 cup milk (any kind)
2 Tbsp peanut butter (I used Once Again American Classic)
2 heaping Tbsp unsweetened cocoa powder
1 hard boiled egg
1/2 to 1 tsp vanilla stevia (to taste, really—I tasted and added, so I’m not sure exactly how much. It will depend on the brands of ingredients and ripeness of your avocado too!)

Blend until totally smooth! You could try this in a food processor, but I’m not sure if it will get completely smooth. A high speed blender will work for sure. I swear you cannot taste or detect the texture of the egg even a tiny bit!

Maybe it doesn’t look 100% smooth in the picture, but it really was. There seem to be little flecks of egg, but it was really unnoticeable.

I think this pudding was a great balance for me–in terms of protein, fat, and carbs. Sometimes when I’m not focusing, my protein intake isn’t quite as high as I want it to be. I can easily get enough fat though!

News/Notes: 

Soon I want to talk about the types of protein I’ve been consuming. I know I’ve mentioned that I like whey and egg white protein (Jay Robb is my favorite brand). I used to think plant-based was best, and I still like it, but once I started consuming more whey protein, I noticed better muscle definition. Recently, I added in another protein that is made from goat milk, and it contains whey and casein. Some people are allergic to casein, so this would not work for them, but for others it can be a great choice! I’ll explain why soon, and today I’ll just give you a quick look at my after workout drink—it’s super simple, just 8oz of water, 1 scoop of goat milk protein powder (chocolate) and one scoop of egg white protein powder (vanilla). I would have used vanilla whey powder, but I don’t have any right now. It’s SO smooth, and like a fabulous version of chocolate milk…but low carb. (yes, I ate carbs after my workout, but I like to have this 30 minutes after, and then something with carbs within 60 minutes). It’s all very strategic, you know 🙂

After Workout Protein Drink
I've been wanting one of these water bottles for a long time...and finally found one that has a flip top instead of a screw top. The devil is in the details, right? I wanted orange, but they didn't have it and I wasn't patient enough to wait.

I’m really disappointed because my favorite yoga teacher is taking a hiatus, so I can’t do my normal 2-classes-on-Friday anymore. I’ll find something to sub in, I’m sure, now that I can go Y-Hopping. I was so tempted to go to the Eastside Y for spinning this morning–the same amazing spinning teacher is still on the schedule about 5 years after I first attended her class. But I didn’t think driving 40 minutes for spinning when I had work to do was reasonable.

Oh, one last thing. I ordered The Equalizer (the pink one). I mentioned to Joe that I ordered a new piece of fitness equipment and he said, “Oh good!” ….Because he is always enthusiastic and supportive of everything I do…but I’m wondering what he’ll say when it arrives. I barely even have a closet, so I’m not sure where the heck I’m going to put it.

    Interesting adding in the boiled egg. I’m all about adding in a variety of protein sources b/c they metabolize differently. Yoga vs spin? You know my answer is going to be spin 😉

  2. I’m a little squeamish about sweet things tasting “eggy”- not a big fan of pies or custards. I get so lost when I try to figure out which types of protein are best. There are so many conflicting ideas out there for someone like me who doesn’t know a lot about it.

  3. i love your recipe with that hard boiled egg in there! for sure i would try that – sounds great!
    and goat’s milk pro powder…never heard of it – you are a great source for introducing me to new products, lisa (thinking coconut flour, here).
    i would take yoga over spinning…but a satisfying class (that is usually dependent on the instructor). i love the high energy and fast music in spin, but it’s just not my thing, really.

    I love this! An egg?!  Great idea!  I would never have thought to do this, but you know whaT? I’m going to try it!
    And as for yoga or spinning, today I plan to do a bit of both (10 minutes of yoga to warm up, then 30 minutes of spinning at my parent’s house). Wahooo!

  5. huh I’ve never heard of putting an egg in pudding like that, but I’d try it!!! 😀 
    As for spin vs. yoga I’d probably choose spinning because it is pretty much my all time favorite class!

  6. I think Tony would like the Equalizer more than me. I feel like he likes to get equipment and use it for a bit and then it kind of sits there. I’m working on his motivation these days…

    The pudding looks delicious. I haven’t ventured into the avocado puddings yet, but I’m still thinking about it. I would try the egg too. I love the addition of more protein!

    I need to try Jay Robb’s protein. I always walk past it…I need to suck it up and give it a try.

    I saw Maria’s recipe for her protein puddings made with hard boiled eggs and I honestly thought it sounded weird, but since I’m open minded I would definitely give the recipe a try. Maybe yours first since it has cocoa and peanut butter in it! 🙂

    I’ve never used an Equalizer, but now I want one too! My birthday is in a couple weeks!!…. hihi 🙂

    I loved spinning, but haven’t gone in SO long. I would go for yoga right now because I could benefit more from it right now.

I saw Maria’s post on the protein pudding too (I love her ideas, but some of them are a lil crazy…like the meatloaf muffins with “faux”tatoes and cherry tomatoes…)—and it reminded me that I saw it somewhere else a year ago (but I was too hesitant to try it then!). I think that’s why I decided to start with avos, pb, and just one egg instead of having it be mostly egg—it must taste eggy like that and I think that might not be as delicious to me… Lol..

    I’m a little scared of the equalizer…it was shipped today, and I don’t know whether to be excited or fearful!

  9. I’m not a huge fan of hard boiled eggs, I have to really be in the mood for it – which is weird cause I love eggs!  Kudos to you for trying it!  It does sounds interesting!  Good luck with the equalizer!

  10. Lisa..that pudding looks amazing! Never would have thought to add a hard boiled egg! It looks like it worked great! I would have been afraid of that!

    I never used an equalizer but looking forward to seeing what it’s all about!!!
