An unlikely but beautiful couple, plus pretzels that digest like vegetables

Beets and Butternut!

This wouldn’t have been my first thought for a dinner pairing, but I saw a recipe yesterday for a mostly raw vegan beets and butternut dish, and it was really pretty (and I suppose I also believed that it would taste good!).

I intended to make it exactly as the recipe said, but while I grocery shopped, I made some changes (the truth is that I was in Pittsford Wegmans and I didn’t feel like walking all the way across the store just to get cashews, so I bought goat cheese instead).

I’ve been lacking in the effort department lately in the kitchen, and this was a good compromise—not very labor intensive, but unique and took some planning.

Beets, Butternut, Pesto, Greens, and Goat Cheese...It was really good, maybe even better because the beets and butternut were still warm!

Joe came home yesterday with these (yes, I’m proud.)

25g of whole grains per serving, and the the label claims that they digest like a vegetable. Ok, that sounds like a good thing...and they are really crunchy and yummy too.
My fave smoothie this week: 1 cup almond milk, 1 cup (or less, I didn't measure) frozen blueberries, 1 tbsp ground flax, cinnamon, maca, lucuma, yacon...you could leave out the last three. The cinnamon was an impulse-add...and it was awesome!
