Hicka-What?

One of my new favorite salad additions is shredded jicama (pronounced “hicka-muh” by Americans). This root is high in carbs and fiber and is 86-90% water.  It adds a nice crunch to a salad, reminiscent of certain apples, and can also be added to soups, fruit salads, and stir fries. 

In Wegmans, you can find jicama near other produce such as tomatillos, jerusalem artichokes, aloe, ginger, etc. 

Would you try it just for some variety?  All you have to do is cut off the outer peel/skin and then shred or chop the white inner part.  It’s easy!
